Complete Recipe to Make Summer Berry Pudding with Frozen Barriers

Ingredients:

  1. Water – 2 tbsp
  2. Caster sugar – 150 g
  3. Frozen berries – 450 g
  4. White bread – 100 to 150 g
  5. Whipped cream or custard – 2 cups

Instructions:

  • Take a saucepan, add water and sugar in it at medium flame. Mix these ingredients and allow this mixture to boil for a few minutes.
  • Add all the frozen berries in this sugar mixture except strawberries. Boil the berries for a few seconds.
  • When the berries become softened, turn off the flame and let this mixture cool at room temperature.
  • Cut the bread slices into half and then cut each half into two triangles. Now use the bread triangles to line a pint/700mL pudding.
  • Begin by lining the pudding bowl using plastic wrap. Soak the bread triangles in the prepared berries sugar syrup and lay them at the base of the pudding bowl.
  • Keep on lining the bowl in the same manner. Make sure there are no breaks while lining with the bread.
  • When the lining of the pudding bowl is done, fill it with the sugar berries syrup and the strawberries. Place a couple of more bread triangles soaked in sugar syrup.
  • Try not to pour a lot of syrup, otherwise, it will lead to a change in the shape of pudding. Only add enough syrup that can be properly soaked by the bread.
  • Cover the pudding bowl with a lid and refrigerate it for 6 – 8 hours or overnight.
  • Then turn the pudding out on a nice-looking serving dish.
  • Summer berry pudding with frozen berries is ready to eat.
  • You can garnish it with whipped cream or make a yummy custard sauce before serving.
  • You can also serve it with ice cream during hot summers and enjoy.
